黒い刃の包丁を探していた所この包丁にたどり着きました。非常に値段が高く、同じく貝印の関孫六 ダマスカス 牛刀 210mm AE-5205が価格も手頃だったので迷いましたが無料砥ぎ直しがある点と、どうせ買うなら一生物の買い物と思い、こちらにしました。しかし今まで安物の三徳包丁(刃渡り160mmクラス)を使っていたので225mmでは最初は手に余る感じでしたが2週間も使っていると段々と慣れてきました。切れ味に関しては本当に申し分なしです。トマト、キャベツ、玉ねぎ、ブリのブロック、鶏のもも肉など試しましたがどれも驚くほどよく切れます。玉ねぎに至っては全く目がしみず、トマトも古い包丁では無理やり押し切る感じでしたがスパスパと気持ちよく切れます。今では本当に良い買い物ををしたなと思っています。しかし一つだけ難点なのが、これだけ高い包丁だと自分で砥ぐのが非常に怖いです。切れ味が損なってしまいそうで自分ではなく、プロの無料砥ぎ直しがあるのが購入の動機の一つではありましたがいまでは予備として貝印 ダマスカス 三徳包丁 165mmAE-5200の購入も検討し始めてしまった事です。
